  • • Participate in new creation of menu items, food promotions, and recipe research and food presentation.

    • Maintain and enrich the quality of food and menus offered to Club members.

    • Ensure that the daily routine in the kitchen is maintained.

    • Verify all sauce and mise-en-place for quality and suitability before service.

    • Double check all events, banquets, outlets and different production areas. Review buffets, set-ups and show pieces.

    • Check all refrigerators and freezers for cleanliness and hygiene.

    • Delegate responsibilities to all line staff and supervise quality of product and productivity of staff.

    • Create daily and weekly specials and describe item to the line staff and dining room servers.

    • Must be able to provide cost and selling price for each menu item prepared.

    • Train kitchen staff in the preparation of each dish offered in the outlet.

    • Ensure that all raw materials needed for operation and production of the kitchen are ordered and received in accordance with the present Club procedure.

    • Assist in the budget planning for the kitchen.

    • Must be able to stand in for any member of the kitchen staff (due to absence/vacation) to ensure the smooth operation of the kitchen.

    • Responsible for the scheduling of all kitchen staff, in such a manner as to ensure that kitchen operation is in constant supervision by senior staff member at all times.

    • Responsible for ensuring that all kitchen equipment is in good working condition and that all Kitchen staff is fully trained in the operation of this equipment. Should there be any mechanical fault in any of the kitchen equipment; the Sous Chef should immediately report this to Maintenance so that appropriate steps may be initiated to correct such faults.

    • The Sous Chef must, at all times, maintain a neat, clean and tidy appearance and ensure that all kitchen staff maintains a high standard of cleanliness in their respective area.

    • Must ensure that all kitchen staff is adequately and continuously trained to fully attain the high standard required by Anvaya Cove.

    • Must be fully aware at all times of the number of expected guests in the food and beverage outlets and the various function bookings.
