  • Ensures that high quality and proper safety standards are being implemented and maintained in their branches.

    Plans and modifies menus in coordination with the corporate chef.

    Handles kitchen concerns and issues and reports directly to the corporate chef.

    Ensures that all approved cycle menus, recipes, standard platings and serving portions are being implemented.

    Records and monitors all documents needed for dietary, cafeteria and catering operations.

    Prepares and cooks all food to the highest standard of food hygiene and quality.

    Monitors and controls the food cost and minimizes food wastes in his/her respective branch.

    Ensures that proper HACCP and operation manual standards and procedures are being implemented.

    Conducts kitchen branch audits according to standards and guidelines imposed by the corporate chef.

    Answers to all audits whether internal or external and ensures that their respective branches are always audit ready.

    Ensures that all concerns of the principal are being addressed and such concerns are being coordinated with management.

    Performs other related duties as assigned.
